Vegan Nested Omelette

30 min 2 Main Ingredient: Sunreap Besan (Gram Flour) Cuisine: Indian Fusion
1 cup Besan (gram flour)
1/4 cup Onion (finely chopped)
1/4 cup Carrot (finely grated)
1/4 cup Coriander leaves (finely chopped)
2 no. Green chili (finely chopped)
1/2 tsp Ginger (finely grated)
1/4 tsp Turmeric powder
1/2 tsp Cumin seed
Water as needed
Salt as needed
Oil as needed
Step 1In a mixing bowl first take all the ingredients except oil and water. Using a spoon mix everything.
Step 2Then add 1/2 cup water or little more (1-2 tbsp) and using a hand whisk mix till no lumps are there. A smooth flowing consistency of batter will form, keep aside.
Step 3Take a piping bag / a bottle with nozzle tip (sauce) and pour the batter into that. Meanwhile heat a flat pan (grease the pan with oil if it is a iron tawa, else skip).
Step 4 Pour the batter in zigzag manner over the tawa keeping the heat at low. Allow to cook for 1 minute and then drizzle little oil all over. Flip and again allow to cook the other side. Transfer to a plate and roll it. Repeat the same procedure for rest batter.
Step 5Serve warm as it is or with any desired chutney!
Recipe Note :
Step 1Any other grated veggies can also be added.
Step 2Spiciness can be adjusted as per choice.
Step 3Skip the addition of green chilies if preparing for kids.
