Tharikachiyathu using Coconut Milk

Ingredients

2 tbsp Sooji Rava

1 cup Thick coconut milk

1.5 cups Thin coconut milk

1/4 cup sugar

1 tsp ghee

1/2 tsp Crushed cardamom

A pinch salt

Directions

Step 1First heat ghee in a pan.

Step 2Then add the sooji (rava) and fry for 3-4 minutes.

Step 3Next add the thin coconut milk and cook for about 5 minutes, stirring continuously.

Step 4Now add sugar, the crushed cardamom and salt and mix well. Let the mixture begin to thicken.

Step 5Once it thickens, add the thick coconut milk and allow to warm. Do not boil after adding the thick coconut milk. The mixture may split.

Step 6Switch the flame off. Serve while tharikachiyathu is still warm.

Step 7Finally you may add cashew nuts and raisins that are fried in ghee. This is optional.You may even add slices of onions that are fried in ghee. It adds a different and a very beautiful flavour to the drink.
