Ingredients

60 grams Sooji

10 to 12 Almonds

A handful Cashews

A handful Pista

1 bowl Dates

A handful Raisins

Directions

Step 1Soak almonds, dates, and raisins in water for about 15 minutes.Remove the seeds from soaked dates. (Keep the water aside which can be used for cooking). Peel off the skin from almonds.

Step 2Now blend all the dates, raisins, and half of the almonds and cashews (keep few for garnishing).

Step 3Heat a frying pan, keeping the flame from low to medium, slightly roast suji. Keep stirring until suji gets a little off white in colour and remove from pan.

Step 4Now boil 1 cup of water.Add the blended paste of dry fruits.Once the water comes to a boil, slowly add in the roasted suji. Keeping to a low flame, keep stirring suji in the pan with a ladle. Once suji separates by the sides of the pan, higher the flame to medium and simmer for 2-5 minutes.

Step 5Switch off the flame and let the suji settle down thick. Leave it uncovered in the pan for 10 minutes.

Step 6Finely chop the remaining cashew, almonds and all pista. Sprinkle the dry fruits over the pan within that 10 minutes. Finally spread the prepared suji in a flat platter and cut it in a diamond shape with a knife.

I usually have rice in the afternoon with two side dishes and some fried veggies or papad. Evenings I keep it simple with some fruits or light snacks, also take a walk generally or perform a 5-10 mins yoga. Night preferably I prepare chapati with lentil soup or stir fry veggie.
