Sooji Dhokla Dabeli Sandwich

For layer :

200 gms Sunreap Sooji

100 gms curd

Salt to taste

Water as needed

1/2 tsp Fruit salt

2 tsp Tamarind paste

For Filling :

3-4 boiled mashed potatoes

1 tsp ginger chopped

1 Green chilli finely chopped

1 tbsp finely chopped coconut pieces

2 Chopped onions

1 Fresh Pomegranate

As required Masala peanuts

handful Coriander chopped

1 tsp Dabeli masala

As needed Sev

As per need Green chutney

As per needed Garlic chutney

As required Oil

1/2 tsp Mustard seeds

Few Curry leaves

1 tbsp grated coconut

For Preparing Masala :

Step 1Soak the Palak in warm water for 3-4 minutes and then drain the water. This helps remove any impurities from the palak. On mixing in the dough it gives the cooked khakhra a better colour.

Step 2Mix all the ingredients with a little water so that the consistency becomes like chapati dough

Step 3Knead the dough well so that there remains no lump.Leave it covered for 20 minutes.

Step 4After that take a little dough and make very thin chapatis. It is important to use dry flour to use for dusting while rolling the dough to avoid it from sticking to the base.

Step 5Now on a dosa tawa or a non stick tawa at low heat cook chapatis on both sides by flipping it when the bubbles starts to appear. Cook slowly to ensure even cooking.

Step 6Now cook the sides by pressing with muslin cloth until it becomes crispy like papad.Repeat the same procedure with the remaining dough.

Step 7Leave aside open on a plate to let it cool. Once all are at room temperature store in an airtight flat round tiffin. Enjoy it as a snack!
