Narkeli Pulao with Narkel Bora

2 cup basmati rice

1/2 cuproasted cashew

1/2 cupfried raisin

6/7 pcs green chili silted

1 tbs whole garam masala (green cardamom, cinnamon, cloves, pepper)

200ml coconut milk

2 tbsp groundnut oil

1 tbs ghee

2 pcs tejpatta

Salt as per taste

Narkel bora/laddoo balls

1/3 cup Sunreap atta

2 cupgrated coconut

1/2 tsp Turmeric powder

1 green chilli finely chopped

salt as per taste

Step 1Wash the rice and drain water. In a big cooking pot add sufficient water for boiling for the rice. When it starts boiling, add the rice , 1/2 tsp oil and 1/2 tsp salt.

Step 2When rice gets boiled 80% (each grain feels firm bit soft when pressed) drain the water and spread the booked rice on a flat surface to avoid the stickiness of the rice.

Step 3Now in a bowl, mix all the ingredients for narkel bora and knead with water well to make it firm but not very hard. After kneading prepare small balls like laddoo from this dough.

Step 4In a kadai mix oil and ghee to shallow fry the coconut balls. When the bora turns golden in colour, take them out and place them in a bowl to cool.

Step 5Now for the rice, in a frying pan, put oil , tej patta and whole garam masala and stir fry. Then add cashews, raisin, followed by boiled rice, salt and a pinch of sugar to the pan.

Step 6Mix it well for 5 minutes and then add coconut milk. Now cook the rice on medium flame stirring in intervals as needed or till the coconut is completely absorbed by the rice.

Step 7After this in ghee stir fry silt green chilies and put aside. Now for the preparation gently mix the rice and the narkel bora in a bowl adding the green chillies. Narkeli pulao is ready to serve.
