Ingredients

3 and 1/2 cup Sunreap Maida

1/4 cup olive oil

2tsp salt

2tsp sugar/honey

1/2tsp dry yeast

Herbs of your choice like oregano, thyme, rosemary (dry or fresh)

1 and 1/4 cup lukewarm water

Some fresh green olive, capers and sliced onion for toppings

Directions

Step 1Take 1/4 cup lukewarm water, add all the salt, sugar and yeast, mix it with the help of spoon and keep it aside for 15 minutes till it froths.

Step 2After 15 minutes take maida in a large bowl and add the yeast and knead the dough with hands (if the dough needs extra water u can add it). Make a soft dough. Pat the dough with 1 tbsp olive oil and cover with a damp cloth and keep aside for 45 minutes.

Step 3 Take a flat baking tray and grease it with olive oil generously. Put the dough over it. Flatten out the dough evenly on all sides by pressing down with your finger tips or tapping with your hands.

Step 4Now cover it with a damp cloth and set aside for another 20 minutes.

Step 5Once the dough rises, add the fresh toppings of sliced raw onions, olives and capers along with herbs of your choice like rosemary or thyme. Drizzle generously more olive oil on top of the focaccia before baking.

Step 6Preheat Oven to 180 degrees Celsius. And bake the focaccia for 25-30 minutes till the top of the focaccia becomes golden brown.

Step 7Now take it out, let it cool, remove gently from the baking pan and serve.
