Eggless Christmas Plum Cake

Green and Black Raisins (Kishmish) 1/2 Cup

Dates Chopped 5 to 6

Chopped Nuts (Cashew, Almond, Walnut) 1/2 Cup

Dried Cranberries Chopped 10 to 15

Dried Prunes Chopped (plum) 3 to 4

Orange Juice 250 ml (1 Cup) (Can Use Any Juice/Rum/Brandy for Soaking)

Jaggery Powder/Cubes 1 Cup

Water 1/2 Cup

Cardamom (Elaichi) 3

Cloves (Lavang) 4 to 5

Nutmeg (Jaiphal) Small Pc

Cinnamon (Dal Chini) 1 inch

Refined Oil (Any flavourless Oil) 1/2 Cup

Sunreap Whole Wheat Flour (Gehun ka Atta) 1.5 Cups

Baking Soda 1/2 tsp

Baking Powder 1 tsp

Ground Spices

Step 1Soak the Dry Fruits and Nuts in the Juice for 3 to 4 hrs or Overnight.

Step 2Melt the Jaggery Completely and Cool it down Completely.

Step 3Crush and Grind the Spices Nicely in a Mortar Pessel.

Step 4Take a Big Bowl and Whisk melted jaggery and refined oil nicely.

Step 5Sieve Sunreap Atta, Salt, Baking Soda, Baking Powder, Ground Spices in the bowl and gently mix everything with a spatula using Cut n Fold Method.

Step 6Add the Soaked Nuts and Seeds and make a thick batter but of pouring consistency.

Step 7Next Grease a Baking Tin with Oil and place a Parchment paper. Brush some oil on top and pour the prepared batter.

Step 8Garnish with Nuts of your choice Bake in a Kadhai at low flame for 55 to 60 mins OR Bake in an Oven at 180 degree celcius for 45 to 50 mins or till done. Let the cake cool down and enjoy!
