Cream Cheese Dumplings

Ingredients

For Dough

1/2 cup Sunreap Maida

Water

1 TSP oil

Salt to taste

For Filling

1 cup paneer

3-4 cloves garlic

2 tbsp spring onions

1 green chillies

1 tbsp processed cheese or more

salt and pepper to taste (approx 2 tsp each)

For Chilli Oil

3 tbsp oil

1 tbsp Garlic

1 tbsp chilli flakes

1 tsp soya sauce

1 tsp vinegar

For Spring Onion Dip

2 tbsp Chopped spring onion

2 tsp Grated ginger

Pink salt

1 tsp Fresh crushed pepper

2 tbsp Rice wine vinegar

1 tsp Sesame oil

1 tbsp Lime juice

Directions

Step 1For Dough

In a mixing bowl, add maida, salt and mix. Add water little at a time to knead to make a medium stiff dough. The dough should be non sticky, smooth and firm. Keep the momo dough covered for 2 hours before making filling.

Step 2For the filling

In a small jar of the mixer/grinder/blender you have at home, add all the above ingredients and mix it till it turns into a fine paste like consistency. Remove from jar and set aside to use as filling.

Step 3 For Chilli Oil

Mix all the above ingredients and set aside to be used as dip for the dumplings.

Step 4For Spring Onion Dip

Put the chopped spring onion, ginger, salt, and pepper in a mortar and pestle and grind. Once grinder, pour hot sesame oil over it. Add some vinegar and mix well. Once cooled, and in some lime juice. You can adjust the quantity of any ingredients in the dips as per your taste too.

For Dumplings

Step 1Take a regular idli steamer and fill it with water and pre heat it over a medium heat. Divide the momo dough into equal portions, of lemon sized balls. Take each ball and start rolling it out on a surface. Roll out the dough as thin as you can so that the outer layer of the momo is thin and delicate. In every flatten dough leaf, add 1 tablespoon of the cream cheese filling. Fold the edges to form a semicircle. Start pleating at one end to give a nice characteristic pleats.

Step 2Do the same with all the rest of the dough and filling. Keep the completed dumplings under a moist cloth to prevent drying.

Step 3Grease the steamer plate with oil before placing the dumplings to prevent from sticking. In the steamer add water in the base, when water start boiling put the dumpling filled steamer plate on it. Cover and steam the dumplings for for 10

15 minutes until they look glossy on the outside.

Step 4Once they are done transfer gently on the serving plate and enjoy with the dips!
