4 tbsp Sunreap Pure Chana Sattu

1 cup Broccoli Florets

3-4 Shallots

1 tbsp chopped Cilantro

2 tsp Lemon Juice

1/6 tsp Pink Himalayan salt ( or as per taste )

2 tsp Chili coriander infused coconut oil

Blanch the broccoli florets.

Transfer broccoli florets, shallots and cilantro to a blender. Add 1/2 cup of water and puree it.

Transfer the puree into a saucepan . Place it on a low flame and cook for 1-2 mins

Dissolve the sattu in 1 1/2 cup water and whisk it lightly to break any lumps. Add another 2 cups of water to dilute it.

Pour this liquid into the saucepan and keep stirring it for 3 minutes as it start to thicken. Remove from the flame.

Let it come down to room temperature before putting it in the fridge for 20 mins.

Just before serving, remove the chilled soup from the fridge. Add lemon juice and drizzle the infused coconut oil on top.

Tips to make infused oil

Heat the oil to a low temperature in a thick bottomed pan. Add the crushed chili and coriander stems . Let it sit on a very low flame for 5-6 mins. Remove and let it cool down completely before straining the solids. This can be stored in an airtight bottle for a month.
